Streusel-Stuffed Peaches

Fresh summer peaches are halved and filled with a buttery brown sugar streusel, then baked until tender. A warm, fruit-forward dessert that's simple and absolutely delicious.

Ingredients
  

  • 3 ripe peaches, halved and pits removed
  • ¼ cup all-purpose flour
  • 3 tbsp light brown sugar, packed
  • 3 tbsp old-fashioned oats
  • tsp cinnamon
  • pinch salt
  • 2 tbsp unsalted butter, softened
  • 2 tbsp sliced almonds
  • vanilla ice cream, for serving (optional)

Method
 

  1. Preheat oven to 350°F. Lightly grease a small baking dish or line with parchment paper.
  2. Place the peach halves cut-side up in the baking dish.
  3. In a small bowl, combine flour, brown sugar, oats, cinnamon, and salt.
  4. Add softened butter and mix with a fork or fingers until crumbly. Stir in sliced almonds.
  5. Divide the streusel mixture evenly between the peach halves, pressing lightly to adhere.
  6. Bake for 20–25 minutes, until peaches are tender and topping is golden.
  7. Serve warm with vanilla ice cream, if desired.

Notes

Serve warm with vanilla ice cream or whipped cream. You can swap almonds for pecans or omit nuts altogether. Great for barbecues, potlucks, or an easy weeknight treat.
