Equipment

Ingredients

  • ½ cup rice vinegar
  • ½ cup water
  • ½ cup sugar
  • 1 Tbsp soy sauce
  • 1 Tbsp finely minced garlic
  • ½ tsp red pepper flakes (adjust to taste)
  • 1 Tbsp cornstarch
  • 2 Tbsp water (for slurry)

Instructions

  • Combine the rice vinegar, water, sugar, soy sauce, garlic, and red pepper flakes in a small saucepan.
  • Bring to a boil, then reduce heat and simmer for 5 minutes, stirring occasionally.
  • Mix cornstarch and water together to form a slurry, then slowly add to the sauce, stirring constantly.
  • Continue cooking for 1-2 minutes until sauce has thickened.
  • Let cool before using. Store in a sealed jar in the refrigerator.

Notes

You can adjust the spiciness by using fewer or more red pepper flakes. Store in the refrigerator in a sealed jar for up to 1 month. It also freezes well in small portions.
