Ingredients
  

  • 2 cups steel-cut oats
  • 2 cups Fuji apples peeled and chopped into 1-inch pieces
  • 4 cups water
  • 4 cups unsweetened almond milk
  • 2 tablespoons ground cinnamon
  • 2 tablespoons pure maple syrup
  • 1 teaspoon pure vanilla extract
  • 1 dash salt

Method
 

  1. Peel and chop 2–3 Fuji apples into about 2 cups of 1-inch pieces.
  2. Spray your slow cooker insert with non-stick cooking spray.
  3. Add the steel-cut oats, apples, water, almond milk, cinnamon, maple syrup, vanilla extract, and a dash of salt to the slow cooker. Stir until combined.
  4. Cook on HIGH for 3–4 hours or on LOW for 7–8 hours. The oatmeal will thicken as it cools.
  5. Serve warm with your favorite toppings such as extra maple syrup, almond milk, peanut butter, nuts, dried fruit, or coconut flakes.

Notes

Tips:
• This recipe makes creamy oatmeal — if you prefer thicker oats, use about 3½ cups liquid per cup of oats.
• Store in the refrigerator for up to 3 days or freeze up to 6 months.
• To reheat, add a little milk or water and warm in the microwave or on the stovetop.
