Ingredients
  

  • 1 pound ground beef
  • 1 medium onion, diced
  • 1 tablespoon minced garlic
  • 2 cups beef broth
  • 10 oz can Rotel (diced tomatoes & green chilies), undrained
  • 1 packet taco seasoning (or 3 tbsp homemade)
  • 36 ounces frozen cheese tortellini
  • 3 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 tablespoon chopped cilantro (optional for garnish)

Method
 

  1. Add the ground beef, onions, and garlic to a large skillet or Dutch oven over medium-high heat. Cook until the beef is browned, then drain excess grease.
  2. Stir in the beef broth, Rotel, and taco seasoning. Bring the mixture to a boil.
  3. Add the frozen tortellini. Cover, reduce heat, and simmer 10–13 minutes until tender.
  4. Stir in cheddar cheese and sour cream. Season with salt and pepper. Heat gently until melted and creamy.
  5. Top with chopped cilantro and serve immediately.

Notes

For a milder flavor, replace Rotel with regular diced tomatoes. Add black beans for extra fiber or swap cheddar for Pepper Jack if you prefer heat. Reheat gently with a splash of broth to loosen the sauce.
