Ingredients

  • 1 pound ground beef
  • 1 medium onion, diced
  • 1 tablespoon minced garlic
  • 2 cups beef broth
  • 10 oz can Rotel (diced tomatoes & green chilies), undrained
  • 1 packet taco seasoning (or 3 tbsp homemade)
  • 36 ounces frozen cheese tortellini
  • 3 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 tablespoon chopped cilantro (optional for garnish)

Instructions

  • Add the ground beef, onions, and garlic to a large skillet or Dutch oven over medium-high heat. Cook until the beef is browned, then drain excess grease.
  • Stir in the beef broth, Rotel, and taco seasoning. Bring the mixture to a boil.
  • Add the frozen tortellini. Cover, reduce heat, and simmer 10–13 minutes until tender.
  • Stir in cheddar cheese and sour cream. Season with salt and pepper. Heat gently until melted and creamy.
  • Top with chopped cilantro and serve immediately.

Notes

For a milder flavor, replace Rotel with regular diced tomatoes. Add black beans for extra fiber or swap cheddar for Pepper Jack if you prefer heat. Reheat gently with a splash of broth to loosen the sauce.
