- Add the ground beef, onions, and garlic to a large skillet or Dutch oven over medium-high heat. Cook until the beef is browned, then drain excess grease.
- Stir in the beef broth, Rotel, and taco seasoning. Bring the mixture to a boil.
- Add the frozen tortellini. Cover, reduce heat, and simmer 10–13 minutes until tender.
- Stir in cheddar cheese and sour cream. Season with salt and pepper. Heat gently until melted and creamy.
- Top with chopped cilantro and serve immediately.
Notes
For a milder flavor, replace Rotel with regular diced tomatoes. Add black beans for extra fiber or swap cheddar for Pepper Jack if you prefer heat. Reheat gently with a splash of broth to loosen the sauce.
