Ingredients
  

  • 1 ½ cups fresh cranberries
  • 6 tablespoons butter
  • 1 cup self-rising cornmeal mix or see note for substitute
  • ¾ cup sugar plus 2 tablespoons divided
  • 1 cup milk
  • 1 orange zest only
  • ¼ cup orange juice freshly squeezed

Method
 

  1. Preheat oven to 350°F (175°C). Place the butter in a 9×13-inch baking dish and put it in the oven until melted, about 5 minutes. Remove from oven once melted.
  2. In a medium mixing bowl, combine the self-rising cornmeal mix, ¾ cup sugar, milk, orange zest, and orange juice. Stir until smooth and fully combined.
  3. Pour the batter evenly over the melted butter in the baking dish. Do not stir; allow the butter to spread naturally.
  4. Sprinkle the fresh cranberries evenly over the batter. Then sprinkle the remaining 2 tablespoons of sugar on top.
  5. Bake for 40 minutes, or until the top is golden brown and the batter is set. Let cool slightly before serving.
  6. Serve warm as-is or topped with vanilla ice cream for a comforting finish.

Notes

Substitution Tip: If you can’t find self-rising cornmeal mix, make your own using 1 cup cornmeal mixed with 1 tablespoon baking powder and ½ teaspoon salt.
Serving Suggestion: Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream for extra indulgence.
