- 1 ½ cups fresh cranberries
- 6 tablespoons butter
- 1 cup self-rising cornmeal mix or see note for substitute
- ¾ cup sugar plus 2 tablespoons divided
- 1 cup milk
- 1 orange zest only
- ¼ cup orange juice freshly squeezed
Preheat oven to 350°F (175°C). Place the butter in a 9×13-inch baking dish and put it in the oven until melted, about 5 minutes. Remove from oven once melted.
In a medium mixing bowl, combine the self-rising cornmeal mix, ¾ cup sugar, milk, orange zest, and orange juice. Stir until smooth and fully combined.
Pour the batter evenly over the melted butter in the baking dish. Do not stir; allow the butter to spread naturally.
Sprinkle the fresh cranberries evenly over the batter. Then sprinkle the remaining 2 tablespoons of sugar on top.
Bake for 40 minutes, or until the top is golden brown and the batter is set. Let cool slightly before serving.
Serve warm as-is or topped with vanilla ice cream for a comforting finish.
Substitution Tip: If you can’t find self-rising cornmeal mix, make your own using 1 cup cornmeal mixed with 1 tablespoon baking powder and ½ teaspoon salt.
