Ingredients

  • 3 cups corn kernels (frozen or canned, drained)
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 0.5 cup milk
  • 0.25 cup unsalted butter, melted
  • 1 tsp garlic powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup bread crumbs or crushed crackers (optional topping)

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  • In a large bowl, combine cream cheese, milk, melted butter, garlic powder, salt, and pepper until smooth.
  • Stir in the corn and half of the shredded cheddar cheese.
  • Pour the mixture into the prepared baking dish. Sprinkle the remaining cheddar cheese evenly on top.
  • Optional: Add bread crumbs or crushed crackers for a crunchy topping.
  • Bake for 40–45 minutes, until hot and bubbly with golden cheese on top.
  • Let rest for 5 minutes before serving.

Notes

Use frozen or canned corn for convenience. Add diced jalapeños or green chilies for a spicy twist. This casserole can be prepared a day in advance and baked just before serving.
