Ingredients
  

  • 1 cup uncooked white rice (yields 3 cups cooked)
  • 2 pounds lean ground beef
  • 2 large garlic cloves, minced
  • 2 tsp cumin
  • 2 tsp paprika
  • 1 tsp oregano
  • 1 tsp onion powder
  • 0.25 tsp chili powder
  • 1 cup canned black beans, drained
  • 12 ounces mild tomato salsa
  • 3 tablespoons BBQ sauce
  • 12 ounces grated cheese (cheddar, Monterey Jack, or blend)
  • 12 large soft tortillas (flour or high-protein)

Method
 

  1. Cook the rice using your preferred method and set aside. In a large pan, brown the ground beef with garlic, then drain excess fat.
  2. Add cumin, paprika, oregano, onion powder, chili powder, and salt. Cook 1–2 minutes until fragrant.
  3. Stir in black beans, salsa, and BBQ sauce. Cook 1 minute to reduce excess moisture, then mix in cooked rice. Let the mixture cool slightly.
  4. Place a tortilla flat, add about 1 cup filling, sprinkle cheese, fold sides in, and roll tightly to form a burrito.
  5. Wrap each burrito tightly in plastic wrap, then again in foil. Store in freezer bags or containers.

Notes

For best texture, double wrap each burrito in plastic wrap and foil to prevent freezer burn. Reheat by microwaving to thaw, then crisp in a pan or air fryer. Add corn or peppers for extra veggies or swap rice for cauliflower rice for a low-carb version.
