Ingredients

  • 2 large sweet potatoes, diced
  • 2 cans black beans (15 oz), drained
  • 1 large onion, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 3 cloves garlic, minced
  • 1–2 chipotle peppers in adobo, chopped
  • 1 can fire-roasted tomatoes (14.5 oz)
  • 3 cups vegetable broth
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • 2 tbsp olive oil
  • 2 tbsp lime juice

Instructions

  • Sauté onions and peppers in oil until softened.
  • Add garlic and spices; cook 1 minute.
  • Add sweet potatoes, beans, tomatoes, and broth.
  • Simmer uncovered 30 minutes until tender.
  • Mash some potatoes, add lime juice, season, and serve.

Notes

Mash sweet potatoes to thicken naturally. Start with 1 chipotle and adjust heat. Slow cooker friendly.
